Let there be food!

Finally, I have had a few days off in a row and its been a fabulous mini vacation.
First off Halloween...and the carving of our pumpkin...kids had a blast...
Lily was the Devil's Bride..

Jack insisted on Thomas the Tank.

Halloween was really mellow this year...we really didn't do much..Lily got invited to go to some carnival and Jack just wanted to go trick or treating.
And we actually got *gasp* 2 trick or treaters this year...woo hoo!!!

On the food front you all may know I love my jumbo muffin tin, and when those cute little apple pies turned out good, well had to make something else in those too!
So meatloaf muffins it was..
Everyone got an individual meat muffin thingy and it was so cool!

Yesterday was cool and drizzle-ish all day and today was pretty much the same, grey clouds, cool crisp wind..so in spirit of some chilly weather what better excuse to make some clam chowder!

Here's the dish...

First in a huge pot cook up bunches of bacon..(I used a whole package)


Meanwhile drain 2 cans of minced clams and reserve the juice..( the juice should equal one cup..if it falls short however..you can use water to make it up to a cup)

Peel and chop of 2 huge potatoes..


After doing this you should have some cold white wine, it goes great with this dish!

*When the bacon is nice and crisp remove from pot and drain..reserving about 2-3 tablespoons left and leave it in the pot. Chop up bacon.

*Now add the clam juice, potatoes, one diced onion..a bunch of thyme, one teaspoon of chicken bouillon..(although I was out of this..but you would have never missed it, so you may omit this step), freshly cracked pepper, and a teaspoon of Worcestershire and bring to a boil.

*Turn down heat and simmer for about 10-15 minutes until potatoes are tender.

*Add 2 cups of milk, 1 cup of cream or half and half ,

*2 tablespoons of flour *With a masher or the back of a fork mash potatoes slightly.

*Stir in clams.
*Cook for another 5 or so minutes.

*Ladle in bowl and top with crispy bacon.

*Enjoy!



(**Oh and for the person who was asking about the color for their living room, yes I will take another picture, but I will wait to do so in the daylight so you can see it better. Hope it works out for ya...its an awesome color!)**

Oh yum...except for the clams :) I am a big bacon lover though! The costumes were great! Hope all is well!!
